ÖZET
Salmonella, küresel olarak hafif ya da şiddetli düzeyde gıda kaynaklı hastalık vakalarına yol açan patojen bir mikroorganizmadır. Enterobacteriaceae familyasına ait, Gram negatif, çubuk şeklinde, fakültatif anaerob ve spor oluşturmayan bu bakteri, gıda kaynaklı salgınlara neden olan patojen mikroorganizmalar arasında dünyada çoğunlukla ilk veya ikinci sırada yer almaktadır. Salmonella suşları, insanlarda oluşturdukları hastalık tablosuna göre tifoidal veya nontifoidal Salmonella olmak üzere 2 gruba ayrılmakta; nontifoidal suşların meydana getirdiği enfeksiyon salmonelloz olarak adlandırılmaktadır. Salmonelloz sağlıklı bireylerde genellikle diyare, ateş ve abdominal ağrı gibi belirtilerle kendini göstermekte iken, bağışıklığı baskılanmış bireyleri içeren duyarlı gruplarda yaşamı tehdit edici bir enfeksiyona dönüşebilmektedir. Salmonella'nın insanlara en önemli bulaşma yolu, kontamine gıdalar aracılığıyla gerçekleşen fekaloral yolla bulaşmadır. Et ve et ürünleri Salmonella açısından en riskli gıdalar arasındadır ve etken, bu gıdalar aracılığıyla dünyanın çeşitli bölgelerinde salgınlara neden olabilmektedir. Salmonella salgınlarının meydana gelmesinde, gıdalara ısıl işlem uygulanmaması, gıdaların yetersiz pişirilerek tüketilmesi ve uygun olmayan koşullarda muhafazası gibi faktörler önemli bir rol oynamaktadır. Bu derleme çalışmasında, Salmonella'nın sığır eti ve et ürünlerindeki prevalansı, söz konusu gıda matrislerinden izole edilen serotipler ve ilişkili salgınların incelenmesi amaçlanmıştır. Buna göre sığır eti ve sığır kıymalarında, Salmonella prevalansının küresel olarak geniş bir aralıkta değişkenlik gösterdiği; Salmonella Typhimurium (S. Typhimurium), S. Montevideo, S. Anatum, S. Agona ve S. Muenchen'in sığır etinden sıklıkla izole edilen serotipler arasında olduğu ve halk sağlığı bakımından söz konusu serotiplerden kaynaklı salmonelloza dikkat edilmesinin uygun olacağı değerlendirilmektedir.

ABSTRACT
Salmonella is a pathogenic microorganism that causes mild or severe cases of foodborne illness globally. This Gramnegative, rod-shaped, facultative anaerobe and non-spore-forming bacterium belonging to the Enterobacteriaceae family is mostly in the first or second rank in the world among the pathogenic microorganisms that cause foodborne outbreaks. Salmonella strains are classified into 2 groups, typhoidal or non-typhoidal Salmonella, concerning the disease they cause in humans, and the infection caused by non-typhoidal strains is called salmonellosis. While salmonellosis usually manifests itself with symptoms such as diarrhea, fever, and abdominal pain in healthy individuals, it can become a lifethreatening infection in susceptible groups, including immunocompromised individuals. The most important mode of transmission of Salmonella to humans is the fecal-oral route through contamined food. Meat and meat products are among the most risky foods for Salmonella and the agent can cause outbreaks in various parts of the world through these foods. Factors such as not applying heat treatment to foods, consuming foods with insufficient cooking and storing them under inappropriate conditions play an important role in the occurrence of Salmonella outbreaks. This review aims to examine the prevalence of Salmonella in beef and meat products and the outbreaks associated with serotypes isolated from these food matrices. Accordingly, it is considered that the prevalence of Salmonella in beef and ground beef varies in a wide range globally, and Salmonella Typhimurium (S. Typhimurium), S. Montevideo, S. Anatum, S. Agona and S. Muenchen are among the serotypes frequently isolated from beef, and it would be appropriate to pay attention to salmonellosis caused by these serotypes in terms of public health.

Any harm, criminal and civil liability resulted or will result from changes and/or corrections required by "Turkiye Klinikleri" and were not made on time by the "USER"s belongs completely to the users.

Being late or failure of performance or non-defaulting of this and similar cases like this will not be the case from the viewpoint of "Turkiye Klinikleri", and "Turkiye Klinikleri" will not have any damage liability for these situations. "Force majeure" term will be regarded as outside of the concerned party's reasonable control and any situation that "Turkiye Klinikleri" cannot prevent even though it shows due diligence. Also, force majeure situations include but not limited to natural disasters, rebellion, war, strike, communication problems, infrastructure and internet failure, power cut and bad weather conditions.

8. LAW AND AUTHORISATION TO FOLLOW

Turkish Law will be applied in practicing, interpreting the hereby "Terms of Use" and managing the emerging legal relationships within this "Terms of Use" in case of finding element of foreignness, except for the rules of Turkish conflict of laws. Ankara Courts and Enforcement Offices are entitled in any controversy happened or may happen due to hereby contract.

9. CLOSING AND AGREEMENT

Hereby "Terms of Use" come into force when announced in the "SITE" by "Turkiye Klinikleri". The users are regarded to agree to hereby contract terms by using the "SITE". "Turkiye Klinikleri" may change the contract terms and the changes will be come into force by specifying the version number and the date of change on time it is published in the "SITE".
